These red mulberries were well known also during early Roman empire. Pliny the Elder told us about antioxidants, aminoacids, minerals, and vitamins of this fruit. This paste, perfect for a sweet sour sorbet, has a typical astringent taste and prestigious and unique flavor, with a reddish and shades of violet color, thanks to mulberries variety and ripeness.
