Paste made with “sour cherries processed with old-school Modena recipe (MO)”

The old Modena was called by Cicero “mutina firmissima et splendissima”. These sour cherries, from Modena countryside, also known as “visciole”, since ancient times were slow cooked to produce a raw cream. Visciole’s flavor is sweet and slightly bitter, different and more engaging than normal cherries.
